Holiday Meal Ideas

These are busy days, with big work projects being wrapped up—and of course gifts to be wrapped up, too! Sometimes a special dinner with family sneaks up and you need a delicious menu that tastes amazing, but takes less than an hour. Doable? Yep.

It’s all in recipe strategy and having a few tricks up your sleeves, like:

Braising. Braising simply means cooking meat or vegetables with liquid very slowly in a covered pan or Dutch oven. Not quite as easy as a slow cooker, but you can control the temperature a bit better and get really impressive dishes with little fuss. You have to plan ahead for braising, but by dinnertime your fancy main course will be ready to go.

Shrimp cocktail appetizers. So easy to prepare, shrimp cocktails are still associated with elegant dinners. Assemble pre-cooked large shrimp in sturdy martini glasses. Add a dollop of cocktail sauce and a wedge of fresh lemon.

Read ahead. If you want to try something new, spend some time reading the entire recipe. You may need to marinate your dish for a few hours or bake it not once, but twice. Haven’t done your homework? Be ready with a Plan B.

Plan B: Grab a store-bought rotisserie chicken and some rice pilaf, and make a quick mustard sauce out of Dijon mustard, olive oil, garlic and capers. Tear up fresh lettuce leaves and add sliced pears, blue cheese crumbles and a light raspberry vinaigrette. Drizzle wheat germ and maple syrup over vanilla ice cream for dessert!
