Healthier St. Patrick’s Day Recipes
St. Patrick’s Day is a holiday that loves tradition—from its pints of Guinness to the standard dishes that grace the table at mealtime. But there are still ways to hold on to tradition while adding nutritious ingredients like wheat germ that will make you feel a little less guilt while indulging.
The star of the show is corned beef. No matter how you slice it, however, corned beef has a high fat content (though it is relatively low calorie). This main-course meat often makes its only appearance at the dinner table in March, so we’re not going to mess with that tradition. Rather, we offer ways to surround your corned beef with delicious, and healthy, sides that would be welcome on any St. Patrick’s Day table not too tightly bound to tradition. You might like them so much, you’ll skip going back for seconds of corned beef.
Traditional Irish tables typically serve potatoes that have been boiled with the corned beef. Health-wise, this is a fine way to have your potatoes on St. Patrick’s Day—as long as you don’t drown them in butter once they reach your plate!
