Speed Scratch: Delicious Breakfasts

Breakfast time often means rush hour in many households. Whether it’s hurrying off to work, packing up everyone for school or making sure you’re not late to weekend sports games, the morning meal often gets short shrift.

The good news is while breakfast made from scratch is delish, cooking your first meal of the day with the help of store-bought mixes and products – what we call “speed scratch” – can be just as tasty and nutritious. Read on for ways to prepare morning meals that you and your family will love, while still being able to scoot people out the door quickly.

Griddle greats

Making pancakes from a mix is nothing new (perhaps you made some this morning?). Boost nutrition and offer a special treat by whipping up a batch of these Berry Delicious and Easy Wheat Germ Pancakes. Incorporating Kretschmer Wheat Germ, blueberries, walnuts and cinnamon into Krusteaz Buttermilk Pancake Mix not only adds protein and many nutrients, but also provides a more filling – and tasty – start to the day. Topping the hotcakes with warmed all-fruit jelly is a refreshing and more nutritious option than pancake syrup.

Waffles are another favorite from the griddle. Liven yours up by adding the delightful flavor of pumpkin with these Pumpkin Waffles with Wheat Germ. The pumpkin in the recipe helps provide 70 percent of your daily vitamin A needs, so you’ll see the day ahead a little more clearly! They’re also an excellent source of calcium, vitamin E, folate, iron, thiamin, phosphorous and zinc. So feel no guilt as you make these for the family. These also store well in the freezer, so you can always pull a previously made batch out to quickly heat up in the toaster oven.

Bowls of goodness

If you have time on the weekend to create your own homemade granola for the week ahead, you won’t regret it. Our Homemade Granola with Wheat Germ adds mango, pumpkin seeds, dried cherries and almonds for a different and delicious morning meal.

If that’s not realistic for you, pick up a box of your favorite granola at the store. You can easily boost the nutrition by adding fruit and a spoonful of wheat germ. Even better, layer it with fruit and low-fat Greek yogurt in a breakfast parfait for a mega protein burst that almost tastes like dessert for breakfast.

When you’re serving bran flakes (or other nutritious boxed cereals) or instant oatmeal¸ add-ins are the key to healthier bowls. Try nuts, fruit, cinnamon and wheat germ for more nutrition and a treat that feels more special than plain cereal out of the box.
